Cookie monster!

Hello readers! Had decided to make some cookies today, and although I set out to do something like rocky road or smores cookies I actually settled for chocolate chip cookies, perfect with a glass of milk! After a quick root around the internet I thought I'd give Martha Stewart's Soft and Chewy Chocolate Chip Cookies a whirl. I was hoping to find something that was soft and slightly squidgy inside and crispy outside and although these don't do this, they are delicious soft cookies that I think would be lovely with a good glass of cow juice! So if you want to give them a go, here is the recipe (Martha's measurements are all in cups so I've added grams/oz for anyone who doesn't own some measuring cups):

Martha Stewart's Soft and Chewy Chocolate Chip Cookies

2 1/4 cups/5oz/125g all-purpose flour (plain flour to us Brits)
1/2 teaspoon baking soda (bicarbonate of soda/baking powder for us Brits)
1 cup (2 sticks)/8oz/200g unsalted butter, room temperature
1/2 cup/4oz/100g granulated sugar
1 cup/8oz/200g packed light-brown sugar
1 teaspoon salt
2 teaspoons pure vanilla extract
2 large eggs
2 cups/12oz/300g semisweet and/or milk chocolate chips (I used a bar of Cadbury's dream in chunks and then dark chocolate chips).

1. Preheat the oven to 200C/180C fan/gas mark 4.
2. Cream together the butter and both sugars.
3. Add the salt, vanilla and eggs and beat in well.
4. Add the flour and baking soda and mix well.
5. Finally add the chocolate and stir to make sure the mixture is fully combined.
6. Line 2 baking trays with baking parchment and then use a table spoon to put dollops of the cookie dough onto the trays (I found I needed 4 trays in total, but as I only own 2 I just baked them in 2 batches).
7. Bake for 10-15 minutes until they are slightly brown and crisp around the edges.
8. Cool briefly on the trays then leave to cool on a wire cooling wrack. Enjoy with a glass of milk!

Looking forward to a couple of these little beauties tomorrow!

Still on the hunt for the perfect cookie recipe though, am hoping to track it down from a certain someone soon...
