Rock n Roll!

Rock cakes always bring back memories of childhood! They are ready in about 20 minutes, made from common cupboard ingredients and delicious served warm, sprinkled with sugar. Perfect for unexpected guests, rainy days and making with children.


Rock Cakes
Makes 8-10 cakes

7oz/175g self raising flour,
3.5oz/90g butter,
3oz/75g castor sugar,
3.5oz/90g sultanas (or any other dried fruit),
1 egg, beaten,
1 or 2 desertspoons of milk.

1. Preheat the oven to 200C/gas mark 6.
2. Sift the flour into a bowl and rub in the butter.
3. Add the sugar and sultanas, the mix in the egg and milk.
4. Grease two baking trays and use a tablespoon to dollop the mixture onto the trays, 5 to 6 on each tray. Don't forget to space them out as they will spread.
5. Bake for 15-20 minutes until golden brown.
6. Sprinkle with sugar whilst still warm.
